Ingredients

  • 2 medium potatoes, peeled and quartered
  • 2 tsp vegetable oil
  • 1 small onion, very finely chopped
  • Quarter of a medium red pepper, very finely chopped
  • 60g (2.5oz) frozen petit pois
  • 105g (3.5oz) / about half a small can of red salmon – skinless, boneless and with no added salt
  • A little flour or cornflour for shaping and additional oil for frying

Method

  1. Boil the potatoes in unsalted water until soft, drain and mash.
  2. Meanwhile, fry the onion and red pepper in the oil until softened.
  3. Cook the peas in the microwave or in boiling unsalted water until just tender, then drain.
  4. Combine the salmon, peas, onion and peppers, and allow to cool a little.
  5. Divide the mixture into 8 pieces, and using a little flour, shape them into rounds, and flatten a little.
  6. Heat a little oil in a non-stick pan and fry gently until lightly browned, allowing 2 patties per serving.
  7. Let your toddler's portion cool a little before serving.
  8. Serve with some halved cherry tomatoes, and soft cooked carrot batons.
