Miso soup recipe

Potato salad

Serves 3

You'll need:

  • 200g new potatoes - leave the skins on for a dish full of fibre
  • One spring onion
  • 1 tablespoon mayonnaise, or a little more if you’d like a creamier potato salad
  • ½ tablespoon of olive oil
  • Sprinkle of parsley


  1. Boil the potatoes and let them cool.
  2. Cut them into bite size chunks and combine them in a bowl with the rest of the ingredients.
  3. Serve!

This will make enough for three servings, so save a couple of portions to go with your lunch or dinner.
